Seven Layer Dip

Mexican food on its own can be a bit labor intensive and if you are cooking for a crowd, some of the recipes seem like a lot of work. But there is this one recipe for a Mexican seven layer dip which feeds a crowd with amazing ease. I have made this on several occasions and it is always devoured! Best served with tortilla chips or with baked pita chips.



This recipe has been adapted from this recipe on Allrecipes. I have made changes to the original recipe. And this recipe is quite easily adaptable to what you may have in the pantry that day. Must are the three layers of refried beans, cream cheese & sour cream and salsa. The other items are optional and the dish can be made  vegetarian or non vegetarian by changing the other ingredients. Cooked ground beef will be delicious in this but this is really good as is! Definitely worth a try - go ahead and entice your taste buds and your imagination with this recipe.

Ingredients:
1/2 package taco seasoning mix
1 can refried beans
1/2 package (4 oz) cream cheese
1 cup light sour cream
1 1/2 cups homemade/store-bought salsa
1/2 cup canned black beans (drained and rinsed in water)
1/2 cup each red/yellow/green bell pepper chopped
1/4 cup chopped green onions
1 cup shredded cheddar cheese

Method:
1. In a medium bowl, blend the taco mix and refried beans. Spread on the bottom of a serving dish/platter.
2. In a bowl mix the cream cheese and sour cream. Spread over the refried beans and top with the salsa.
3. Top with bell peppers, black beans and sliced onions.
4. Garnish with cheddar cheese and serve with tortilla chips.
